Tomato & herb omeletteThis omelette is also high in good quality protein and the antioxidant Lycopene which is great for mens health. Don't be scared of a little bit of butter. Its far better than margarine and it actually contains vitamin A which is great for your immune system and for healthy vision. You can use dried basil but I much prefer fresh basil, it just has so much more flavour. It can be served for any meal of the day. Serves 1. Ingredients 2 ripe tomatoes, skinned and chopped Method In a small saucepan melt the butter and fry the tomatoes for 2 to 3 minutes, remove the pan from the heat and mix in the basil. Season well! Heat a saucepan and when hot drop in the remaining butter. When it starts to foam, pour in the beaten eggs. Now, you want to start working quickly here - when the eggs start to set, gently push the edges of the omelette away from the sides of the pan towards the centre with the side of a fork and let some of the un-set egg come into contact with the hot pan. You have to gently tip the pan to do this effectively. Do this around the pan until most of the egg mixture is cooked. You want to avoid over browning the bottom of the omelette. Add the tomato mixture on top. Start to lift the cooked edges of the omelette and fold in half. Serve immediately with a tossed green salad. |
